SUPER Easy and Delicious Fruit Cake with Streusel

My dear non-Slovak friends, the following type of cake is very typical for Slovakia (or the Czech Republic). There are a LOT of recipes for this cake but I am going to share with you the ONE - the ONE, which I have been using for more than 15 years, the ONE which has never failed me, the ONE which is ridiculously easy and cheap... and the ONE, which has received numerous compliments. I am not kidding. For me, this is a holy grail type of recipe - the cake batter is slightly vanillish-sweet and , the fruits give it a kick, and the streussel - come on - who doesn't like streusel? 

We will need:
1 cup caster sugar
2 eggs
1 cup milk
1/2 cup oil
1 teaspoon vanilla essence
2 cups all purpose flour
1 baking powder (12 g)

your favourite fruits

3 tablespoon all purpose flour
3 tablespoon caster sugar
3 tablespoon unsalted butter (room temperature)
if you want to make things slightly more interesting, you can add a little bit of cinnamon (especially when the fruits of your choice are apples) 

The ingredients are for one big pan (30x40 cm).

METHOD (easy as cake...):

1. Preheat the oven to 180°C/350F, prepare your pan (as usually grease it and sift with flour or line the bottom of the pan with parchment paper).

Combine all ingredients for the streusel. I make it with my hands - I just crumble the ingredients with my hands.

2. Mix eggs, sugar, oil, milk (if we put all "wet" ingredients together, I do not want to see the mess created by using a hand mixer - thus, I recommend adding part of wet ingredients, then part of dry ingredients and so on...). At the end, we add the baking powder. 

3. Pour the cake batter into the prepared pan, put fruits of your choice on the cake batter and sprinkle  the streusel on it. 

4. Bake for approx. 40 min at 180°C/350°F. Let it cool and then engage your taste buds :) Enjoy!

Whilst it is true that cheesecakes and macaroons are great and I love them, I sometimes like to go back to the traditional recipes and cakes of the Slovak kitchen :) And this cake is a great representative of it.
