Brownies with coconut (a la David Lebovitz)

There is not a lot to be told about this recipe. First, it is full of chocolate (I know - brownies - full of chocolate? Who would have thought). Second, it contains a coconut for a special kick. And third, the recipe had been tested by a great blogger  David Lebovitz, which for me means that the cake is gonna be freaking awesome. Hm, next (what number should follow - yeah, but there is not a lot to be told...),  everybody really adored these brownies. And last, this is idiot resistance recipe - really, you cannot "screw" this one.

We will need:
The amount is for a 20cmx20cm / 8x8 inch pan.

200g of chocolate (I have used 53% bittersweet chocolate, if you will use 32%, I recommend reducing an amount of suger by approx. 20 g)
60 ml  (1/4 cup) of or coffee
115g butter
150g  (3/4 cup) (brown) of caster sugar
2 TBSP of all purpose flour
4 eggs
2 TPSN of shredded coconut
65g (1/3 cup) of chocolate chips

1. Butter the pan and dust with cacao. Preheat the oven at 180°C/350°F.

2. Put the pan over the medium heat and let the butter, chocolate and the water/coffee melt. Stir constantly until smooth. 

TIP: If you want to emphasize the chocolate flavour, add a little bit of vanilly or coffee to your recipe. 

3. When melter, remove from the heat and add sugar, eggs - one by one - then flour, and finally, add the coconut with chocolate chips. 

4. Pur the batter into the pan and let bake at 180°C/350°F for about 25 - 30 minutes. 

Honestly, I am not very good when it comes to knowing when these special kinds of "not completely baked" cakes are ready, but these brownies always turned out great. Really, you cannot do wrong with this one.
